"My second wine to be released, I have forever been highly inspired by one of my favourite Alsatian winemakers, Catherine Riss, and wanted to create something similar to what she does, and ironically it tastes both NOTHING like what she does and she doesn't even do sparkling, but nonetheless it's wonderful.
This wine is form 2019, 3 equal parts Direct press Pinot Noir, Pinot Blanc, and Riesling, all fermented separately in Barrell and bottled this harvest with fresh juice for the sugar.
So it's essentially a direct press white sparkling with almost no tannins but high acidity (my fav), but then I added just a tad of leftover Dornfelder to add this beautiful rose colour.
The wine is so elegant and has this incredible long limestone finish from the Pinot Noir
As you can probably tell with Frauenpower, I'm not the biggest fan of intense bubbles so all the sparkling are bottled with 10 grams of sugar, just to give it more of an effervescence than those intense bubbles.
I call it, champagne style, less pressure"
